Honey Bran Muffins
Description
Honey Bran Muffins are my favorite muffin! The raisins in the light muffin are such a great combination.
This muffins are inspired by the Whole-Wheat Honey Bran Muffins from Peet's Coffee.
I've been trying to make hearty and somewhat healthy muffins for a long time and I've really found this recipe to be my favorite muffin recipe.
These muffins are great to make on the weekend and then you have a quick breakfast or snack for during the week.
Tips
Add more raisins than you think are needed. The raisins are key to the recipe.
I think it's better to cook these muffins longer than you think to make sure the tops get a nice crust on them.
Add a small amount of flour to the raisins to help the raisins not stick together and to prevent the raisins from sinking in the batter.
List of Ingredients
- 1.5 Cups of Wheat Bran
- 1 Cup of White Whole Wheat Flour
- 1 Teaspoon of Baking Soda
- 1 Teaspoon of Baking Powder
- 1/2 Teaspoon of Salt
- 1 Cup of Raisins
- 3/4 Cup of Unsweetened Applesauce
- 1 Cup of Unsweetened Almond Milk
- 2 Eggs
- 1/3 Cup of Honey
- 1/2 Teaspoon of Vanilla Extract
Recipe Steps
- Preheat the oven to 375 degrees (F)
- In a stand mixer or large mixing bowl, combine the dry ingredients: Wheat Bran, Flour, Baking Soda, Baking Powder, Salt, Raisins
- Add in the wet ingredients in this order: Almond Milk, Applesauce, Eggs, Honey, Vanilla Extract
- Mix all the ingredients together until well combined
- Put cupcake wrappers into a cupcake pan and fill each cup about 2/3 full
- The batter should be enough to make 12 muffins
- Bake the muffins for 18 minutes
- Check that the muffins are done by sticking a toothpick in the tallest muffin and making sure it comes out clean (no batter)
